2. WHAT ARE BENEFITS OF BOUDIN?
Boudin is a convenient food. It can be served on its own, or served with some side dishes, such as mashed potatoes, rice pilaf, cornbread croutons and so on.

3. HOW TO COOK BOUDIN?
- Ingredients:
9mm Popper Stuffer in Large and Small Sized Casings (from Butcher Boys).
Rice, uncooked (50lbs for 100-125 servings).
Tablespoon of Salt/Gallon of Pork Meat Soup (about 20 gallons for 100 servings).
1 tsp Cayenne Pepper (about 20 gallons for 100 servings).
(Optional but necessary): About 10lbs of pork liver or pig stomachs per 25 lbs of pork meat is recommended.
- Preparations:
Mix the meat with spices and rice; fill into about 25mm casings; twist into 6-inch sections; tie off each end to form links. (Note: the link sizes are 14-16 inches long for large casing and 9-11 inches long for small casing).
Bake the boudin at 350 degrees Fahrenheit for about 40 minutes or until golden brown. Let it cool, then cut into pieces and serve.
INGREDIENTS FOR COOKING RECIPE: ⅔ lb Pork 1½ cup Chicken Broth 2 Onions, chopped 3 Cloves Garlic 1 tsp Salt ¼ tsp Black Pepper 1 Bay Leaf 8 oz Rice 8 oz Celery, diced 4 oz Green Bell Pepper, chopped 16 oz Italian Sausage ½ cup Parsley.
Directions: (Before doing anything, wash your hands thoroughly)
Cut pork into small chunks, put them in a pot and cover with water. Add about a teaspoon of salt to the water as well as a dash of pepper if desired. Cover the pot, bring the contents to a boil over medium high heat then reduce heat to medium low and simmer for about an hour or until tender enough that you can easily shred it with two forks.
While waiting for meat to cook, dice celery, green bell pepper and onion very finely-like confetti sized pieces. In a separate pot add oil and sauté vegetables on med/low heat until they are barely browned (about ten minutes). Add garlic towards the end of cooking vegetables so as to avoid burning the garlic.
Drain the meat and set aside the broth for later use (we recommend keeping it in a container in your refrigerator if you plan on using it within two days) . Shred all of the pork with forks and return to pot containing vegetables, mix thoroughly. Add salt/pepper as needed (be sure not to add too much salt since sausage has plenty of its own).
If desired season with additional cayenne pepper or red pepper flakes (optional). Reduce heat and simmer mixture until most of liquid is absorbed and rice is cooked through (about thirty minutes).
Use only about ½ cup of broth per pound of sausage/rice mix, don’t drown it! The idea is that this is a dry mixture, not soup. Add broth and mix thoroughly until all rice is coated with liquid and pork mixture is moist but not wet.
If the rice soaks up too much liquid before it is finished cooking add more broth and continue to cook until done (you may need several cups of broth if you let the sausage cool before adding it to the rice). Rice should be tender but firm in the middle when done (al dente) also assure that there is no excess moisture in pot or on bottom of pan when served.

The smaller the sausage is chopped and the more finely diced vegetables are, the easier it will be to mix the rice into the boudin.
Keep in mind that there is no such thing as too much cayenne pepper when cooking boudin! The spicier it gets, the better it tastes… well unless you’re a wimp.
After adding broth to rice/boudin mixture do not stir for at least five minutes so that rice has an opportunity to soak up liquid before stirring. Add raw sausage to mixture then cook for 10 minutes. Stir often to avoid burning.
